Okay, so the month of Vegan Mofo doesn't necessarily mean that all the food you see on the blogs will be healthy. I have seen more pictures of cakes, cinnamon rolls, brownies and cookies than I care to admit. But there was something about these cookies that stopped me in my tracks. They do have oatmeal in them, that counts for something... right?
Even Zoey came out of the woodwork for this one. You can find the complete recipe here. The recipe said that it made six giant cookies and I considered halving it before I made it, but then I thought I didn't want to go through the trouble to only end up with 3 cookies. Well, I didn't make giant cookies, I used my 1 tablespoon measuring spoon and ended up with 50 cookies. Woops.
On the plus side, my neighbor recently brought me some cupcakes that she baked, so now I can return the favor. These cookies are just too good to have 50 of them sitting around the house.
Once I got everything mixed together like this I started wishing that I had made a smaller batch...
Although one taste of the dough and I was in peanut butter cookie bliss. I may have forgotten all my other cares in the world for a moment.
Oh, and the highlight of the recipe for me is that I got to use parchment paper for the first time! Sometimes I feel like the last person in the world to learn about things like parchment paper but this stuff is pretty amazing! I didn't need to spray any non-stick spray on the cookie sheet and the cookies just slid right off when they were finished. To be fair, these cookies may have done that anyway because of the peanut butter and oil in the recipe, but I was still impressed.
Zoey got the first sniff in (of course). She actually got up from her nap to come into the kitchen for this part. Usually if she isn't around for the food prep she doesn't show up for the end result, but tonight she made an exception. I am not sure what drew her to these, but she was curious!
If you ever find yourself craving peanut butter cookies, let me assure you that these cookies are the answer! You could even make 6 giant cookies from the dough, although that might make you sick from cookie overload.

Yum! This is a great recipe that I've used before--it does make a lot of cookies! They look great and Zoey is definitely intrigued. Congrats on your first usage of parchment paper!
Those are good! YUM! I loved em.
i love that your kitty agrees they rock...:)
DH loves peanut butter cookies. Yum!
Since your cookies were smaller did you adjust the amount of time you cooked them?
I must have shortened the cooking time, but I can't remember the details now. I would cook them until they look like they are almost done.
