Acorn Squash with Quinoa

Well, I have been surprisingly overwhelmed by all the Vegan Mofo blogging. I wasn't planning to have any posts this weekend, but 2 recipes that I saw this week caught my eye so I figured I would give a little preview of different things I found.

First up: Acorn Squash stuffed with Quinoa. I found the recipe for this dish here and it was easy and scrumptious.

I baked the acorn squash in the oven (a first for me):

The filling only calls for 1/4 cup of quinoa. When I make this again, I think I will add a little more. Or maybe I will use a smaller squash :) Either way I like the filling to make a little mound on the top.

Here's the filling all mixed together with the dried cranberries:

Out of the oven and ready for lunch. These were so good and the filling was sweeter than anything I would have come up with on my own.

There are so many people participating in Vegan Mofo this year and I have been overwhelmed by the sheer volume of posts out there. When I find gems like this it is all worth it though. Tomorrow I am going to have something even sweeter. If you haven't checked out the list and you are interested, you can find all the participants here:

They look amazing! I found the filling to be sparse too, I was wondering if my squash was too big! Next time, I'll be doubling it too. :-)
