When I saw a recipe for Banana Zucchini Bread over at Kimmy Kokonut's blog, I knew this was a recipe that I wanted to try. Normally Zoey's dad helps with the muffin prep but I decided to surprise him with these on my own. As I was scooping the batter into the muffin pans he decalred "I don't eat vegetables in muffins!" Which was actually fine with me because I suspected that 1) he would and 2) if he didn't that was all the more for me and I could freeze them:
I decided to make muffins instead of a loaf because I am in a muffin frenzy and every baked good these days must come out as muffins. So I filled up my muffin tin (which is actually one of those sillicone muffin trays) and baked them for 30 minutes.

Well, turns out that Zoey's dad does eat vegetables in muffins. Not only did I not have a chance to freeze any for myself for later, they didn't even last long enough to get a good picture once they came out of the muffin pan!
These muffins were super moist and delicious. I used the oil in the recipe even though I normally would have gone with the applesauce substitution. The next time I make these I will try applesauce instead to see how that works out.

I think apple juice and muffins are good cravings to have.

My mouth is watering just looking at the photos! Putting it in muffins is probably the only way I could choke down zuchini. Ack!!!

And I love your Muffin pan - are those silicone ones any good? I saw some in a local shop the other day and they were very reasonably priced but I refrained from buying one because they are so different to what I'm used to. Are they worth getting do you think?

I love the silicone pans. I often don't bake with any added fat so if I use a regular muffin pan the muffins stick to the pan and if I use paper the muffins stick to the paper. With these pans, the muffins just come right out and I love that. I don't even have to spray them with pam or any sort of non-stick spray.
I like them, but the pans get discolored if you use pam/etc. on them, so it's best to just not use anything. Other than that they are GREAT.
I love the heart shaped tin and I"m glad to hear that they work out great as muffins! My next batch will have to be as muffins but it's true, they don't last long on the counter. The first time I made the recipe I had a friend over and he ate half the loaf unawares while chatting.
