It's day 12 of Vegan Mofo and Zoey and I are joining in the Vegan Iron Chef Challenge. The two ingredients for this weekend's challenge are pears and nuts. I have eaten a lot of pears in my life but I don't think that I have ever cooked with one, so this was a real challenge for me. For some reason walnuts seemed like a good nut to pair with pears so I picked some up this morning at the market.
I was so amazed by the pumpkin pancakes that I made for breakfast yesterday morning that I decided to make pancakes again this morning using the 2 new ingredients. The recipe was a success! I modified the recipe from Wing It Vegan because it was an incredible pancake base mix. Here's what Zoey and I did:
Pear-Walnut Pancakes
(makes 4 large pancakes)
Ingredients:
(dry)
1 cup whole wheat pastry flour
1/2 cup ground walnuts (or finely chopped)
1 Tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
(wet)
1 cup light vanilla soy milk
1 small pear - diced
1 teaspoon vanilla
Directions:
1. Mix dry ingredients together.
2. Add wet ingredients and mix until just combined.
3. Ladle 2 large spoonfuls of batter onto a pan over medium heat (spray some non-stick spray first).
4. Flip pancakes when the top starts to bubble and the bottom is golden brown.

I added some chopped walnuts and maple syrup on mine for the ultimate indulgence:
Just for fun I added some leftover pear pieces to the top and Zoey made an appearance to check out the final product:
These were delicious pancakes and I will be sure to make them again. Without the Iron Chef Challenge I never would have paired pears with walnuts (actually I might have never cooked with pears at all) so this was great. Each bite of pancake had a small piece of pear in it which made the pancakes taste sweet and fresh. As I was eating them I considered taking a picture of the inside to show you, but I couldn't tear myself away. They were that good!
