I am still working out of the Healthy Heart Handbook, only instead of spending all my time in the "snacks" section, I have moved on to dinners. So tonight for dinner, we are having Sloppy Joes. I haven't had one of these in a long time, so I was excited to give this recipe a try. The recipe calls for TVP (Textured Vegetable Protein) which I had never used before but since everything else in the recipe was familiar, I was ready to try something new.
I have never cooked with TVP before because it always sounded to me like something that you would use to insulate your attic. However, it is high in protein and low in fat which makes it a good meat replacer in recipes.
The whole thing only took about 30 minutes to throw together (including cooking time) and here is what it looked like as it was simmering:
I served these on buns with some ketchup and they were quite good. However, remember that these are called Sloppy Joes so don't eat them wearing your best clothes. As soon as I picked this sandwich up, half of it fell out the other side. I bet these would work well in wraps if you wanted to avoid that fate.
