Roasted Garbanzo Beans


It's day 6 of vegan mofo and the weather is getting cool and rainy in Oregon. On days like today I like to savor the smell of things roasting in my oven. This chickpea dish is perfect for that. A few years ago I remember making something like this with chickpeas and after roasting them for about 45 minutes they became more like nuts. Plus, it made the whole house smell great.

I haven't quite perfected the spice to bean ratio or the cooking time, but the smell in the house was perfect, and they tasted great fresh out of the oven. The only way in which they weren't perfect is that the next day they were kind of chewy- not the nut texture I had been going for. If you are willing to eat these right out of the oven then the recipe is perfect.

Directions:

1. Take a cup and a half of chickpeas (or 1 can).

2. Add:
1/4 teaspoon garlic powder.
1/8 teaspoon crushed red pepper flakes.


3. Mix well.

4. Spray a cookie sheet with non-stick spray. Bake in the oven at 350 degrees for 45 minutes.

5. Be sure to stir them every 15 minutes so they can cook evenly and not stick. Next time I am going to cook them a little longer and see if that helps the next-day texture issue.


As you can see from the first picture, they came out looking great.
